So many children these days suffer from all sorts of food intolerances or allergies. Some of the more common intolerances are things such as dairy or lactose intolerance, gluten or wheat intolerance, nut allergies and the like. Some intolerances are more serious than others, like a nut allergy for example could be fatal! Dairy intolerance usually will cause a child to experience symptoms such as a snotty nose, a cough or even a skin rash or eczema. Always remember to chat to the child’s parents about any food allergies if you are required to do any cooking/baking or food preparation for the children. Here is a GREAT dairy-free, sugar-free and gluten-free muffin recipe that you can make with the children! It is a very easy recipe and the muffins are simply delicious!
Ingredients:
- ripe bananas (as many as you want)
- 2 eggs
- ¼ cup olive oil
- 2 tablespoons honey
- 1 and a 1/3 cup coconut flour (bought from any health store/Dischem etc)
- 2 teaspoons baking powder (You can get gluten-free options)
- 1 and a half teaspoons ground cinnamon
- ¼ teaspoon salt
- dried cranberries/nuts/pumpkin seeds etc (optional)
Instructions:

Preheat the oven to 180 degrees and grease a muffin tray

Mash the bananas and whisk in the eggs, oil and honey in a bowl until it forms a runny mixture.

Combine the coconut flour, baking powder, cinnamon, salt and cranberries in a bowl.

Add the dry mixture to the wet mixture and mix together with a spoon.

Spoon the muffin mixture into the muffin tray.

Bake in the oven for 30 minutes or until muffins are golden brown.

Serve with butter and honey and enjoy!! (they are delicious)
